Banana Bread Pudding
The weather is getting nastier by the second. Winter is here and a winter storm is brewing outside. A warm Banana Bread pudding was in order. Such comfort food at this time when wrapped up on the couch with your cuddly soft blanket, feet up, and catching up with your favorite shows or movie. I love my weekends as it affords me to do this while testing out recipes.
Ingredients:
Stale bread {a day or so old bread works best, or whatever you have on hand}
1 cup granulated sugar
1 cup brown sugar
2 1/2 cups milk
1 tsp. vanilla extract
1 tsp. vanilla extract
1/2 cup raisins
1 1/2 tsp. cinnamon
2 tbsp. chopped almonds
1 1/2 tsp. cocoa powder {optional}
1 ripe banana
5 eggs
Directions:
Dice or cube stale bread and place on a greased pan. Combine milk, sugar,cinnamon and eggs. Mix well. Pour mixture over bread. {optional-let is sit for 30 mins. or until fully soaked through}. Sprinkle raisins, chopped almonds and thin slices of bananas. {optional-sprinkle 1 tbsp. brown sugar on top before baking, this is more for texture and crunch}. Bake at 350 degrees for 30-35 mins. Let cool or serve while warm.
It's creamy, crunchy, and awesomely delicious.
