Earl Grey Tea Cookies
Adapted from Martha Stewart 'Cookie' cookbook
This cookie has a hint of bergamot and orange flavor to it. Grind tea leaves in a food processor or a spice grinder. Grind it as fine as you want or less if you want to see specks of the tea leaves.
Ingredients:
2 cups All-purpose flour
2 tbsp. finely ground Earl Grey Tea leaves {about 4-5 tea bags}
1/2 tsp. salt {omit this if using salted butter}
1 cup unsalted butter {2 sticks}
1/2 cup confectioner's sugar
1 tbsp. orange zest
1/2 tsp. vanilla extract
I added a 1/2 tsp. of vanilla to this recipe. I usually put a marks on all of my test recipes and additional notes, that way I know whether they are are keeper or not! {Don't be afraid to write on your cookbooks! I was pretty scared at first, then realized hey, I paid for it I can do whatever I want to do to it!}.

Directions:
Combine flour, tea and salt in a bowl and set aside.
Cream butter and butter and orange zest, about 3 minutes until light and fluffy. Reduce speed and add flour mixture gradually until combined. Transfer dough in a parchment paper and shape into logs. Freeze for an hour or so or until ready to bake. Cut logs into 1/4 inch-thick slices and bake at 350 degrees for 10-12 minutes until edges are golden.{Rotate baking tray halfway through, and keep an eye on it as it can burn easily}.Let cool on a wire racks.
These are great cookies. Not too sweet, just right. Cookies can be stored at room temperature and can last up to 5 days.
