Blueberry Ice Cream


Blueberry Ice Cream




Ingredients:

4 cups fresh blueberries or 4 cups frozen blueberries
1-2 cups of sugar {less if fruit is already sweet}
2 tbsp. water
4 cups half-half cream









Directions:

In a large sauce pan bring blueberries, sugar and water; bring to a boil.
Reduce heat and simmer, uncovered until sugar is dissolved and blueberries are softened.
Strain mixture, and discard seeds and skins {this step is optional; I prefer to just leave it as is, and you can actually see flecks of blueberry skins}

Refrigerate mixture at least 2 hours or overnight.
Cream mixture according to ice cream maker's guide.
