Potato Soup


Potato Soup


Ingredients:

Potatoes
Broccoli and carrots {or whatever vegetable you have on hand}
salt and pepper
thyme and rosemary
Chicken broth {optional}
Cream {optional}
bacon bits



Directions:

Boil potatoes in chicken broth or water, until cook through, add the vegetables and simmer for 10 minutes.
Puree the potatoes and vegetables until smooth using a immersion blender or blender.
Season mixture with salt and pepper.
Add cream {optional}
Top with bacon bits.


This is quick and easy to whip. It usually keeps me well during those sick days.
