Quinoa Salad
Ingredients:
Quinoa
Tomatoes
Cucumber
Blackbean
Onion{optional}
Salt and Pepper
Olive oil
Lemon juice
Chicken/Beef broth {optional}
Directions:
Cook Quinoa per package directions in chicken or beef broth {about 15 mins.} and let cool competely.
Dice all the vegetables.
Drain and rinsed canned black beans.
Mix equal parts of olive oil and lemon juice {more or less as preferred}.
Toss all ingredients.
I eat my quinoa salad with whole grain chips. Quinoa has the highest protein content and is a great dietary fiber content in our diet.
